How to Cook
225-250 degrees for 12-16 hours. Trim excess fat to 1/4 inch. Season with 50/50 salt and pepper. Wrap in butcher paper at 165 internal. Pull at 203 when the probe slides in like butter. Rest for minimum 1 hour, ideally 2.
